Overview
The National Cattlemen’s Beef Association (NCBA) is the leading trade association for cattle producers nationally and is funded by The Beef Checkoff. Culinary work within the NCBA is geared toward providing consumers and industry professionals with the knowledge and information necessary to produce great beef eating experiences. Our work supports consumer advertising, marketing, food communications and nutrition programs with impact on and exposure in leading food publications, the beefitswhatsfordinner.com website, and through retailers and foodservice operators nationally.
General Responsibilities
The Manager, Culinary Services is responsible for assisting with coordination and execution of beef cookery and recipe testing. This position also manages the plated photography process for non-consumer marketing needs, and for the generation and development of recipe concepts.
Specific Responsibilities
- Coordinates and manages product/plated photography for culinary generated projects, while maintaining associated budgets.
- Assists with coordination and execution of beef cookery and recipe testing.
- Leads and coordinates recipe concept generation.
- Develops material and represents culinary for the Cattlemen to Cattlemen show in conjunction with other staff members.
- Conducts formal product tastings with program managers and staff.
- Assists with updating/maintaining the recipe and photo database and culinary website.
- Assists with coordinating meal functions and event staffing/support for annual conventions and conferences, and with meal function planning and production for in-house and off-site meetings and events.
- Assist with maintaining a clean work environment and follows sanitation rules and guidelines. Also supports and helps maintain HACCP records.
- Other responsibilities as assigned.
Qualifications
The Manager, Culinary Services, must possess a culinary degree/certificate from an accredited school and have two-plus years of culinary experience with a solid knowledge of beef and veal cuts and cookery methods and a strong understanding of world cuisines and trends. Food photography management and/or food styling experience are strong pluses.
The successful candidate will have strong leadership skills and budgeting experience, be organized, service focused and able to work with a team or independently, and have the ability to manage multiple projects. Excellent verbal and written communication skills, and problem solving skills are a must. This person must also be proficient in Microsoft Word, Excel, and Outlook. He/she must be creative and innovative, and have integrity and strong personal ethics. Travel of up to 30% is required in this position.
