Looking for new beef products isn’t like looking for a needle in a haystack, but it isn’t easy.  According to Carl Blackwell, executive director of product marketing for the National Cattlemen’s Beef Association, concentrating on certain parts of the carcass makes the job easier – and more beneficial to cattle producers.

Blackwell says there are several beef items from the chuck and round that lend themselves to new product development, including convenient hand-held items like the steak sandwich.

According to Blackwell, it isn’t wise for the beef industry to focus too heavily on one new product silver bullet.

Beef checkoff-funded new product development efforts are conducted on behalf of the Cattlemen’s Beef Board and state beef councils by the National Cattlemen’s Beef Association.
