October 16, 2003 - Muscle Profiling Research Benefits Beef Marketers

With rising beef prices, the beef industry’s checkoff-funded efforts to find new uses for under-utilized cuts of the beef carcass are paying off.  Jim Pooser (POOS-er) is the executive director of the South Carolina Beef Board.  He says muscle profiling research has been beneficial in beef marketing – especially to restaurants.

According to Pooser, there are also efforts to introduce the research and its results into non-commercial foodservice arenas.

The muscle profiling research and restaurant promotions are funded by the $1-per-head beef checkoff, which is administered by the Cattlemen’s Beef Board and often further managed by state beef councils across the country.
